Dissolution of Gellan Gum  
The dissolution of the product depends on the medium and the process: it is improved by heat treatment (time, temperature), shear stress(stirrer, homogenizer). A complete dissolution can be rapidly obtained by boiling for 5-10min or at around 85-90°C for 20-30min with sequestrants.

Heat Solution 1. to 85°C-90°C for 15-20minutes for thoroughly dissolving; Add KATIONS (Ca, Mg, Cl, and so on) at dosage of 0.08% max. and other materials into Solution 2. after gellan gum thoroughly dissolved and at proper temperature; Put Solution3 into bottle for cooling down to 23°C; hake the the bottle of Step 4 for a permanent suspending effect. for culture plan medium   Mix gellan gum of 2.75% together with Sodium citrate of 0.04%.  Add it into water and stir while heating to boiling point. Dissolve for about 5-10 minutes until it dissolves fully. Cool to 60 °C, adding into calcium chloride solution, the dosage of calcium chlroide is about 6%.
