Gellan gum is a kind of linear polymer polysaccharide.It is constructured by repeated polymerization of four basic units of monosaccharide molecules.It can be neutralized by potassium, sodium, calcium and magnesium to form a mixed salt.


Character

Gellan gum powder is beige and has no special taste and smell.It breaks down without melting at about 150℃.Good heat and acid resistance and high enzyme stability
Insoluble in non-polar organic solvents and insoluble in cold water. But a little stirring is dispersed in water. When heated, it dissolves into a transparent solution. When cooled, a clear and firm gel is formed.When dissolved in hot deionized water or in low ionic strength solutions in the presence of chelating agent, the aqueous solution is neutral.

Gellan gum has remarkable temperature lag. That is, the gelation temperature is much lower than the melting temperature of the gel. Generally, the gelation temperature is between 20℃ and 50℃, while the melting temperature is between 65 ℃ and 120℃. The temperature hysteresis of gellan gum is of great practical significance to food industry. For example, some products require gelation during addition before melting; Other products require that the gel structure remain stable during heat treatment.


Application

Gellan gum can be used as thickener and stabilizer.

Notes: This product is easy to use, although it is insoluble in cold water, but a little stirring will disperse in water. When heated, it dissolves into a transparent solution. When cooled, it forms a transparent and firm gel. The dosage is small, usually only 1/3~1/2 of AGAR and Carrageenan dosage, the general dosage is 0.05% can form gel (usually 0.1%~0.3%).

The resulting gel is juicy, has good flavor release and melts in your mouth.

It has good stability, acidolysis resistance, enzymolysis resistance. The gel made is very stable even under the conditions of high pressure cooking and baking, and is also very stable in acidic products, and has the best performance under the conditions of pH value 4.0~7.5. The texture is not affected by time and temperature during storage.
